So has anyone made any New Year’s resolutions? Are you keeping your resolutions? I have made a resolution to eat healthier and lose weight. I have been thinking about this for a long time, but have finally made steps to follow through. I have some friends and family that are going to start with me and we will be each others support system. In my attempt to watch more closely what I eat, I have turned to Barilla products that are whole grain or veggie based. Did you know they even have a variety that provides extra nutrients?This summer my family started eating a veggie pasta dish. It is very light and nutritious. We originally started eating this dish as a way to consume all the vegetables that we received from our local CSA membership (Community Supported Agriculture). When I add the new Barilla White Fiber or Veggie pasta I have a delicious and healthy side to go with a grilled chicken breast or steak. It also helps that my kids absolutely love pasta! They don’t particularly care for the vegetables, but they gobble up noodles in this dish!
Veggie Pasta Recipe
4-5 cups raw vegetables (zucchini, yellow squash, green beans, snow peas, onions, green or colored peppers, mushrooms, or any vegetable combination you want.)
1/3 cup Light Italian Dressing
6 ounces or half a box pasta (Barilla PLUS, Whole Grain or Veggie pasta varieties)
2-3 Tablespoons Olive Oil
Pasta Seasoning Sprinkle to taste
Cut veggies and mix in a covered bowl with Italian Dressing. Let vegetable mixture marinate for about a half hour. Saute on grill pan in the grill or in a large pan on the stovetop.
Cook pasta according to directions.
Serve with Parmesan Cheese.
