Betty’s Best Cookbook is full of comfort food recipes in it.  I am always looking for new recipes to try.  I don’t know about you, but somedays I get so sick of the same recipes.  I am also a person who will modify a recipe into something useable for my family.  My children are so picky that sometimes it is hard to try new things.

The first recipe I tried was for the biscuits.  I really don’t care for the refrigerator biscuits that you buy in the can.  So I am always looking for a biscuit recipe that is easy and better than the dreaded canned ones.  I tried a recipe for a creamed chicken recipe.  This was easy to make it and tasted so much better!

I really liked that I didn’t have to roll the dough out instead it says to pat it to the proper thickness.  It is such a pain to get the rolling pin out and then clean all the sticky dough off it. I didn’t have a biscuit cutter so I just used a glass that is about the same size.  My kids even liked these later with jelly on them.  I think next time I will try a breakfast sandwich with this recipe.  It is my new standby when I want a biscuit with supper.

Also a few weeks ago my family had a picnic.  My mom told me to make a Seven Layer Salad, which I love.  I am a huge fan of salads in general.  We normally have this salad every holiday and I have looked for recipes in the past and have had a hard time finding one in my cookbooks.  I didn’t get a picture as I made this at my in-laws house and completely forgot to take my camera with, but trust me when I say the presentation of this salad is very pretty.  I put it in a crystal bowl and the salad really pops.

I will be trying to try some of the chicken recipes in the future as my family likes chicken.
