My thoughts?

We use olive oil in abundance at my home.  Marinades, cooking, baking, and even making popcorn all call for olive oil in my opinion.  I use vegetable oil on occasion, but usually I will turn to olive oil as I know it is a healthier option.  I received a bottle of Carapelli’s Premium 100% Italian Extra Virgin Olive Oil for review purposes.  This particular olive oil is best used for dipping, salads, marinades and flavoring entrées or side dishes.   My husband tried it right out of the bottle (I am not ready to drink olive oil alone:) and declared it very good.   I decided to try marinading the olive oil with some chicken for a recipe I was trying.   I love marinading meat as it makes cooking so much easier, not to mention TASTIER.   The results were fabulous.  My family loved the chicken.  Was it Carapelli Olive Oil that made it so tasty or my superior cooking skills:)   Hmmmmm….I definitely vote for Carapelli!

Lemon Basil Marinade

This spring fresh marinade is great on chicken or seafood.

Ingredients
1/2 cup lemon juice
1/2 cup Carapelli Mild Olive Oil
1/2 cup chopped fresh basil
3 green onions, thinly sliced
2 tablespoons Carapelli white wine vinegar
1/2 teaspoon ground black pepper

Cooking Directions
In small bowl, whisk together all ingredients.

Use to marinate poultry or seafood. For a sauce, simply pour marinade through a sieve to remove the basil leaves. Put sauce in pan and bring mixture to a boil. Cook until sauce is reduced and slightly thickened.

Preparation Time: 5 minutes

Total Time: 5 minutes

Wine Suggestions: Chardonnay, Riesling, Chenin Blanc
