Chicken Lettuce Bundles with Nakano Roasted Garlic Seasoned Rice Vinegar

This past week I made Chicken Lettuce Bundles with Sesame Herb Dressing using  Nakano Roasted Garlic Seasoned Rice vinegar.  This recipe was easy and fast, and it tasted great!  I had never made lettuce bundles before, although I have always wanted to.  I loved using the Roasted Garlic version of rice vinegar.  I always have a bottle of rice vinegar on hand in the cupboard, but this was my first time using the Roasted Garlic variety.  How can you go wrong with Roast Garlic?  We love garlic in abundance in my family and obviously this rice vinegar was an easy hit.

Let me show you how easy it is to make these Chicken Lettuce Bundles!

First combine 2/3 cup mayonnaise with 1/4 cup Nakano Seasoned Rice Vinegar Original or Roasted Garlic

Add 1/3 cup chopped fresh mint

Add 1/3 cup chopped fresh cilantro or basil (I used cilantro)


Add 1 tsp sesame oil (I love sesame oil- it adds such a great flavor!)

Add 2 green onions, finely chopped (I didn’t have gr. onions so I just used regular yellow onions!)

Add 1 TBSP minced fresh ginger (optional) This is a must for my family.  We love it!

Whisk to blend the dressing

Cut avocados in half, remove pits and peel.  Cut into small cubes.

Place the avocado in a bowl and toss with remaining seasoned rice vinegar (1 TBSP)

To assemble lettuce bundles, place a lettuce leaf on each serving plate.  Drizzle center of lettuce with Sesame Herb Dressing.  Top with 1/3 cup chopped chicken.

Add 2 TBSP diced cucumbers (I sliced the cucumbers out of habit!)

Add 1 TBSP matchstick carrots

And add about 1/4 cup diced avocado.  Drizzle with more dressing.  Fold sides of lettuce up and eat taco style.
