Christmas Appetizer Idea- Cranberry Compote

The holidays are here again. Every year is the same, this season zooms by at warp speed. I find myself with too many tasks and not nearly enough time to complete them.  Last Christmas Eve I spent hours wrapping presents.  This time around I’m all about simplifying the season wherever I can.  When it comes to entertaining and attending parties it helps to have a dish at the ready which is delicious and  easy to prepare.  This year I tested out a Cranberry Compote recipe using Brie.  I think anytime Brie is added to a recipe it is immediately a bit more polished and sophisticated.  I’d heard this before, but now I know it’s true–Brie dishes are easy. Sure, they taste great and seem upscale, but topped Brie appetizers typically aren’t overly complicated.

Inspired by the amazing chefs at a recent Food Should Taste Good event, I paired this Cranberry Compote with Sweet Potato Tortilla Chips. I know what you might be thinking.  Non-GMO, gluten-free, Kosher chips should equal zero taste.  That is definitely not the case with these products. I regularly purchase the Multigrain Tortilla chips in bulk at my local Costco.  Made with real ingredients {flax, sunflower and sesame seeds} these vegan snacks are such a great alternative to the standard heavily processed options frequently purchased.  I think it is important to select better options for my little guys.  They are growing boys constantly hungry, but  I make a conscious effort to present wise food options to them.

But back to my Brie.  This recipe {obviously} utilizes cranberries, I used fresh ones.   I had never created a dish with Brie or fresh cranberries before. Clearly it’s never too late to try something new and as you can see by the results I’ve been missing out!

Ingredients
  1. 1 tablespoon olive oil
  2. 1 medium onion, chopped (1/2 cup)
  3. 2 cups fresh or frozen cranberries
  4. 1/4 cup packed brown sugar
  5. 1/4 teaspoon ground cinnamon
  6. 1/2 cup water
  7. 1/4 teaspoon salt
  8. 1 teaspoon red wine vinegar
Instructions
  1. 1. In 1-quart saucepan, heat oil over medium heat. Add onion; cook about 2 minutes or until soft. Add cranberries, brown sugar, cinnamon and water. Cook 8 to 10 minutes or until cranberries have started to pop. Stir in salt and vinegar; cool slightly.
  2. 2. Place cheese on desired serving platter. Pour compote over cheese, and serve with Food Should Taste Good™ Harvest Pumpkin or Sweet Potato chips.

  2. My sister-in-law often brings a similar appetizer to family gatherings around holiday time. This sounds delicious. Truthfully Brie tends to be beyond my food budget most of the time, but around the holidays we tend to splurge a bit on special food treats. Also, it is so beautiful!
