Easy Summer Raspberry Pie

Summertime in Minnesota is a revered season. The boys and I have been enjoying summer with some of our favorite seasonal activities- camping, swimming, lazy days at home reading good books, and of course, enjoying some sweet treats.

Raspberries are definitely one of summer’s natural sweet treats. I’ve been purchasing various varieties of Driscoll’s berries for a long time. The bright red color and perfected raspberry form are top notch with Driscoll’s. The other day I made this super easy raspberry pie in partnership with TheFeedFeed & Driscoll’s. I call it a pie, because it is in a pie crust. I’ll be real in the sense that it could be also considered something of a gelatin salad. But it’s in a pie crust, so I’m sticking with pie. Plus when you add an abundance of fresh raspberries on top, I think that makes this especially alluring in a pie sort of way. This is all my theory anyway….

My little fellas each claimed their own raspberry package. This is such a great way to cut down on fighting, every little bit helps! The taste of fresh raspberries is definitely part of any quintessential summer experience.

Ingredients
  1. graham cracker pie crust {store bought}, raspberry gelatin, whipped topping, fresh raspberries, fresh mint {optional}
Instructions
  1. 1. Prepare raspberry gelatin according to package directions.
  2. 2. Pour prepared gelatin into pie crust.
  3. 3. Refrigerate overnight.
  4. 4. Top with whipped cream, fresh raspberries and fresh mint.
