Make Dinners Easy with a Hotdish #QuickFixCasseroles

During the school year each week can seem like a marathon.  Everyday it’s a matter of balancing all the items I must do.

  • get the kids ready for school
  • take the kids to school/pick them up from school
  • find a few special moments to chat with each child
  • help kids with necessary homework
  • have a few quality moments with the hubby
  • work a full-time job
  • blog
  • manage/clean the house
  • take care of necessary appointments
  • and of course, FEED MY ENTIRE FAMILY!

By the end of the week, I’m exhausted.  I view the weekends as my opportunity to get a head start.  It’s my opportunity for a little peace and a whole lotta planning.  When I have my meals planned out for the week, everything tends to run a little smoother.  I find that sometimes I have anxiety when I don’t have any plans for supper.  I’ve come to realize I don’t need to worry about dinner, there are much more important things to get stressed about:)

The best way to curb any potential worry is to plan meals that are easy and fast.  I used to spend an hour plus carefully constructing our family’s main meal.  Those days are mostly our distant past.  I’m all about fast, delicious, easy meals that full my family up with smiles on their faces.  It’s every mom’s dream, right?

One of my go-to plans is an easy hotdish meal or casserole as some of you like to call them.  Remember this Mexican Beef & Corn Casserole?  It was so easy and delicious, the entire family loved it.  Score! There are a bunch of hotdish recipes via the Country Crock website.  I highly recommend checking it out if you are in need of recipe inspiration.

Here are my best tips for easy meals.

1. Make a casserole ahead of time and freeze it!

2. Make two instead of one! Now when I make a dish I will frequently make two.  One we eat immediately and the other I freeze for a later date.  Why haven’t I been doing this for years?!

3. Pick recipes that do not require a lot of prep work.  Not all recipes are created equally.  Specifically choose those that require less prep work for those days you know you’ll be pinched for time.

4. Cook all the food in one pot= hotdish! Rather than trying to make several different dishes, hotdishes (casseroles) are a great way to provide all the nutrition your family needs in one dish.  I love that hotdishes take out all the coordinating problems associated with cooking multiple dishes.

5. Pick meals with on-hand ingredients.  This might be obvious to some of you.  But I used to select recipes with ingredients that I didn’t have in my home.  Ingredients that I didn’t purchase or use on a regular basis.  Cooking this way can be fun, once in a while.  But it isn’t practical.  Now I tend to cook recipes with staples I have in my home.  When you have all you need, there is no last minute crisis for a missing ingredient.

I recently made the Tex Mex Creamy Chicken Casserole.  Yummy and of course, fast.

I use Country Crock in my dishes because:

  • Have 0g trans fat per serving
  • Contain no partially hydrogenated oils
  • Have no cholesterol
  • Are 70% less fat than butter per serving
  • Have 30% fewer calories than butter per serving

Feel free to check out the recipe online, but as you can see below all the products are the sort of items I keep readily available at home.

Simply mix the ingredients together and layer with the tortillas!

Easy. Delicious. Fast.

  42. My best tip other than those you already mentioned is to make meals using the Crock Pot. I plan the night before throw the ingredients in and it’s done when I get home from work. I also plan meals with leftovers that can be used in another dish or for lunches.

    You know I’ve never really made a casserole but my interest has been growing, especially after seeing how delicious the Tex Mex Creamy Chicken one looks/sounds. I also like/agree with the best tip #1. I do this a lot with different dishes like lasagna. It is definitely a big time saver! It also fills you (me) up while preparing. Heh.
