Open Faced Grilled Tuscan Chicken Sandwiches & a Carapelli Olive Oil Giveaway

The final days of summer are upon us.  I can’t say I’m all that sad to see summer slip by for another year.  The sweltering heat didn’t exactly make for an enjoyable time.  But before I start making soups, hot dishes, and other cold weather fare, I am going to sneak in a few more warm weather inspired dishes.

This Open Faced Grilled Tuscan Chicken Sandwich was delicious and a great way to keep the house cool, as it is made entirely on the grill.  With yummy ingredients like- garlic, bread, olive oil, and fresh rosemary, is there any way this dish couldn’t be a hit?

The toasted bread added a satisfying crunch to the sandwich that my family truly enjoyed.  And I also found the dish to be very family friendly, as my husband and I had the actual sandwich, but I was able to serve the ingredients individually for my children.  The sandwich would be a bit difficult for small children to eat, but they loved the grilled chicken, spinach, and toasted olive oil infused bread I served them!
