Here is one of my all time favorite treat recipes.
This is a like a homemade version of Reese’s Peanut Butter cups!
Let’s get started!
Semi-melt 1/2 cup of butter.
Add 1 1/2 cups of peanut butter.
I used this snazzy little measuring cup from The Pampered Chef that I purchased about a year ago.
To the peanut butter/butter mixture add 1 tsp vanilla
Then add 16oz of powdered sugar
You can try to mix this with a spoon, but it really works best if you mix it with your hands.
It is messy, but it just works best.
Here it is partially mixed.
Once the mixture is properly mixed form it into 1 inch balls and place on a cookie sheet with waxed paper and refrigerate until firm. (about 1 hr)
After the balls are firm (my husband would laugh if he read this) melt 6oz chocolate chips with 2 TBSP solid veg. shortening
Using a toothpick dip each ball into the chocolate mixture covering half to 3/4 of the ball.
Place back on cookie sheet and place in the refrigerator until set. (about 1 hr)
Then they are ready to eat!

Buckeye Balls
1 1/2 cups peanut butter
1/2 cup butter
1 tsp vanilla
160z powdered sugar
6oz chocolate chips
2 TBSP solid veg. shortening
Line a baking sheet with wax paper. Mix peanut butter, butter, vanilla, and sugar with hands to form a smooth dough.
Mixture will be very stiff. Shape dough into balls using 1-2 tsp. Place on wax paper and put into refrigerator. Melt chocolate and shortening.
Insert toothpick into ball and dip into chocolate so 3/4 ball is coated. Return to wax paper 30 minutes or longer until chocolate is firm and not sticky.
Place in plastic container with wax paper between layers.

I love peanut butter. My favorite is Peanut Butter & Co. designer flavors. This cookie reminds me of one of their flavors! I am all about cookies at Christmastime. Last year I spent over $200 on shipping little tins of cookies all over the place and half of them never made their destination! These look like they would be good anytime of the year. I wonder how they taste frozen?
