Before I begin this post, I need to confess I’m not Hispanic. Celebrating Hispanic Heritage Month isn’t a personal matter for me. But my family was more than willing to feast upon delicious Beef Enchiladas during this celebratory month or actually we would be more than willing to feast on them ANY time of the year. What is Hispanic Heritage Month (September 15th-October 15th)?
Hispanic Heritage month celebrates the culture and traditions of those who trace their roots to Spain, Mexico and the Spanish-speaking nations of Central America, South America and the Caribbean.
It is common for people of different cultures and ethnic groups to celebrate their heritage with traditional foods. Case in point, I’m Norwegian and I grew up eating lefse at every holiday. But my family loves to embrace different cultures and Hispanic food is my personal favorite.
I decided to make a feast including Beef Enchiladas, Mexican rice, salsa & chips, and guacamole. It was so tasty. Luckily it didn’t take all day to prepare.
McCormick provided me with a few products to help simplify my meal including Arroz a la Mexicana (yummy!), spices, and enchilada sauce.
I added defrosted frozen spinach to our enchiladas to give them an extra nutritional boost. For the record my little guys didn’t even notice. Score!
I was inspired by McCormick’s recipe for beef enchiladas, but I also added a few other of my personal touches, besides frozen spinach. I added fresh cilantro inside and on top of the enchiladas.

My family loves Hispanic food, so there are a lot of choices of what to make! I’d love to try my hand at making authentic fish tacos. I have made delicious shrimp enchiladas before as well as Puerto Rican roast porn (pernil), which is amazing over rice, in a sandwich, or in a taco/ burrito.
I love love Love mexican food! I would make enchiladas as you did, and I seriously LOVE beef tamales!!!! I miss the Abuelos Mexican eatery, in Myrtle Beach, they had the best combo plates and delicious tamales!!!

I make an enchilada pie by layering seasoned taco meat with tortillas and refried beans. Then bake, and top with all the taco fixins and done! Yum!

Round here – every months is Hispanic Heritage Month – And I doubt even a week has EVER gone by without enjoying at least one meal featuring a hispanic / latin / south of the border meal/menu – and we include among our favorites from Spain – like Paella and Serviche, to all kinds of hot and cold Tapas, Argentinian grtilled Steak with Chimicurri Sauce and a good Cubana sandwich.
We are especially crazy about Mexican food – Tex-Mex included – but especially the more authentic preparations. My Honey/Hubby makes Chiliquiles for a snack all the time! Last weekend I made a fabulous variation of hearty (but subtle!) dinner-worthy Tortilla Soup and some super fresh tasting Fish Tacos (using leftover “last of the season” grilled fresh Alaskan Halibut) with a homemade cabbage and root vegetable slaw. So good!
Tonight in fact we are doing one of our bi-monthly “cheap dinner date night out” in which we usually alternate between Mexican. Vietnamese (sometimes Thai or Korean) and Middle Eastern (where all cuisines from Greek to Persian to Indian to Pakistani to even Syrian get along just fine, thank you.) We love them all!
Tonight it’s one of the Mexican Taquerias we rotate through – this one has got THE BEST Enchiladas (last time we went to the place with the best Tacos…)
I’m usually one for tacos, in part b/c it’s so easy to get my kids to eat veggies. Lettuce and tomato by themselves or on a salad and they won’t touch it, but on a taco they pile it on! I think I might try enchiladas now, maybe it will work.
