Easy Taco Soup Recipe

Fall is here at last! I love autumn.  The cool crisp air, the beautiful warm colors, I love it all.  Everything seems possible with the beginning of fall.  I know people feel that way about the beginning of the year, but for me it is always with the start of autumn.  I guess I associate this feeling with school.  After so many years attending school and then teaching school it shouldn’t be such a surprise.

One of my favorite things to enjoy in fall is soup.  Warm, delicious fill-you-up kind of soup.  I have posted one that is easy and quick.

Taco Soup

1 lb hamburger

¼ cup chopped onion

2 tsp minced garlic

2- 16 oz cans kidney beans

1- 16 oz can stewed tomatoes

1-8 oz can tomato sauce

1 envelope taco seasoning mix

1 can whole kernel corn, drained

1 cup water

Brown hamburger and onion, drain and add remaining ingredients. Simmer 15 minutes. Ladle into individual bowls and top with shredded cheese and sour cream if desired.

  2. I’ve made that recipe before. It does taste very good! I load it down with cheddar cheese with a dollop of sour cream. Not the healthiest add-ons, but very tasty! 🙂
