Gorton’s Seafood Challenge & a Giveaway

I live in Minnesota.  Let’s just say, it’s not exactly the land of fresh seafood options.  Sure, my grocery store carries “fresh” fish.  But as you can imagine, I think they use the word fresh liberally.

Frozen fish is the way to go around my neck of the woods and Gorton’s is my family’s preferred brand.  I am always amazed that the plethora of options that they offer.

During this season of yucky winter/spring like weather I was more than ready to take a Gorton’s Seafood Challenge.  We love fish and seafood in my house.  But frequently, as I’m sure many others do, I get stuck in a rut preparing my meals the same way.  Clearly, it is time for a little shake-up.  My idea for a challenge?  Fish Tacos!

We love fish tacos from restaurants, but I must confess I don’t think I had ever made them at home before.  But based on the results from our supper, I know I will be making them again.  And they were so easy I felt a little guilty at the short amount of time it took to make a meal everyone enjoyed.

I baked our prepackaged Grilled Tilapia fillets in the oven for around 25 minutes and then PRESTO! essentially supper was ready!  I cooked four fillets (two boxes) and I was a little concerned if it would be enough to serve my family of 5, but it was perfect.  Each fillet provided nice chunky meat that was delicious within the tacos.

  2. I just recently bought a package of the Grilled Talapia–it was delicious!! I simply baked and then put some horse radish mixed with mayo and a tiny bit of ketchup on the plate. These fillets are really large-I did eat two of them but could probably have eaten just one and made a veggie on the side and been totally full!!
