I have been meaning to post this recipe for some time now.
This one is a keeper at my house.
Some recipes we pretend we never made.
This is one that gets made over and over again.
The main reason it gets made over and over again is my mother (Nana to the kids).
She always claims it’s “so and so’s” favorite dish and I ought to make it for them.
We all know you love it Nana.
Its okay.
We love it too.
And now my friends here is your chance to love the Nutty Pasta.
If it seems like my quantities are large it is because they are. I doubled the recipe in the pictures.
First you need to create the sauce.
Chop 1 TBSP fresh cilantro
Grate 1 TBSP fresh ginger
Add 3 TBSP soy sauce
2 TBSP crunchy peanut butter
1 TSP sugar
1 TSP rice vinegar
1/4 TSP hot sauce
3 cloves minced garlic
Mix all these ingredients well with a whisk and set aside. (It doesn’t look very pretty- hold tight it gets better)
Then heat 1 TSP sesame oil in a large skillet over medium high heat.
Add 16 oz shrimp (use whatever size you like)
Saute shrimp until cooked through.
Remove shrimp from pan and add 1 cup sliced onion and 1 red bell pepper cut into strips.
Saute for approximately 3 minutes and then add soy sauce mixture, shrimp and 1 cup spinach.
Reduce heat to medium and cook for 2 minutes until spinach wilts.
Serve over any kind of past that you like. We prefer penne or rigatoni.
