In addition to avocados and pickled jalapeños, I have an equally strong obsession with steel-cut oats. I don’t know what’s come over me. But avocados, steel-cut oats, pickled jalapeños and craft beer are my thing. They say your tastebuds change as you get older and that must certainly be true, because as I closely approach the fourth decade of my life these items are my favorites.
The fresh peaches that are available this time of year are so decadent. I couldn’t resist adding some to my recent bowl of cooked oats. My youngest son and I greatly enjoyed this filling breakfast. I chopped up a few slices of peaches and added them to the oats as they were cooking. This allowed them to become a bit more soft and stewed.
For sure steel-cut oats take longer to cook than regular oatmeal, but I find the consistency to be worth the extra time. I can’t make this breakfast everyday, but at least once a week {especially in the winter} it’s such a great way to start the day.

- 1/2 cup steel-cut oats,
- 1 cup milk,
- one ripe peach,
- 1/4 cup brown sugar
- Cook steel-cut oats with milk according to package directions. If the oats become a little dry while cooking add a little extra milk. Dice part of one ripe peach and add to oats while cooking. Once steel-cut oats are cooked and have become soft add brown sugar and mix. Add fresh slices peaches to the finished oats.

This looks delicious! I love the fresh peaches!
