I don’t know where this recipe has been hiding from me for all these years. Recently as I was flipping through a copy of a grocery store recipe/coupon book I discovered this creation. A quick Google search and I encountered countless similar recipes on the interweb. That being said, I took my own stab at originality with this recipe by adding a tablespoon of lemon curd to the mixture. Delish!
You’ll notice below the recipe uses Cool Whip. If you are really focused on keeping all natural ingredients this product could easily be substituted with homemade whipping cream. As you can probably tell I’m down with the Cool Whip. I grew up on it and I figure a little isn’t going to hurt you. Confession: we typically only had Cool Whip in the house around the holidays to use on my mom’s homemade pies. Without fail I would always be sure to dip a finger into the container of Cool Whip. I might like it more than the actual pie……
This recipe is fast, easy, and doesn’t require any cooking or heating of ingredients. It’s the perfect cool summer treat. I used dried mint, but fresh mint would be great here as well, especially if you happen to have some growing inside or outside for the season. I don’t have a green thumb….so dried mint is my friend.

- 1 cup thawed Cool Whip
- 1 (5.3oz) Chobani Mixed Berry Greek Yogurt
- 1 tablespoon Lemon Curd
- 1 small personal sized watermelon
- 2 cups fresh fruit of choice {strawberries, grapes, raspberries, bananas, etc.}
- 1 tablespoon dried mint
- 1. Combine Cool Whip, Greek yogurt, and lemon curd in a bowl.
- 2. Spread mixture over slices of watermelon.
- 3. Top with fresh fruit of choice.
- 4. Sprinkle with dried mint.

That looks so good.
I never would of thought of this.
thank you
